Cuisine: American

Ingredients

  • 1 cup low-sodium chicken bone broth
  • 2 ½ tbsp unflavored gelatin powder
  • 1 tbsp finely chopped parsley (optional)
  • 1 tbsp turmeric powder (optional)

Equipment

  • Small saucepan
  • Mixing bowl (optional)
  • Whisk or spoon
  • Silicone treat molds
  • Refrigerator

Method

  1. Warm the bone broth — Pour the broth into a small saucepan and warm over low to medium heat until just slightly steaming. Do not boil — overheating destroys collagen and amino acids. If using homemade broth, skim off any solidified fat first.
  2. Bloom the gelatin — Sprinkle the gelatin evenly over the surface of the warm broth (in the saucepan or a bowl) and let sit undisturbed for 3–5 minutes until it becomes thick and spongy.
  3. Dissolve the gelatin and add nutrients — Return the saucepan to low heat and gently stir until the gelatin is fully dissolved. Stir in any optional ingredients (turmeric, coconut oil, parsley) until you have a smooth, glossy, golden mixture.
  4. Chill until firm — Refrigerate for at least 2–3 hours, or until completely set. Pop out of molds, or cut into small pieces if using a dish.
